- Step 1: To a pan, add your balsamic vinegar and brown sugar.

- Step 2: Bring to a boil, then turn the heat down and allow to simmer for 15 minutes.

- Step 3: Turn the heat off and allow to cool, the balsamic glaze will gradually thicken when cooling.

- Step 4: To a salad bowl, add your arugula.

- Step 5: Sprinkle with your shavings of parmesan cheese.

- Step 6: Drizzle with a generous amount of your balsamic glaze.

- ¼ cup (30g) Parmesan cheese shavings
- 1 cup (250ml) balsamic vinegar
- ¼ cup (30g) brown sugar
