I cook these up all the time now as they also have my family's approval. Getting the kids to eat their greens isn't a problem when this dish is placed on the table.

Green Bean - Italian Style
Ingredients
- 500g (1 lb.) green beans - Ends trimmed and the cut into thirds.
- 1 tablespoon olive oil
- 1 tablespoon unsalted butter
- 1 bunch Parsley ( I used a packet from Aldi)
- 4 cloves garlic - skinned
- 4 tablespoons freshly grated Parmesan
- Salt and pepper to taste
Instructions
- Bring 500ml (2 cups) lightly salted water to a boil. I also added about a teaspoon of finely ground black pepper.
- Add the green beans and simmer until the water has almost evaporated and the bean are cooked but still al dente.
- Drain and set the beans aside.
- Using a pestle and mortar - pound the garlic and parsley together. You could also just finely chop both.
- Melt the butter and olive oil in a large pan.
- When melted, add the garlic and parsley and sizzle for about 30 seconds.
- Pour the green beans into the pan and stir well to coat them in the garlic and parsley butter.
- Cook for a further minute or until the beans are cooked to your preferred doneness.
- Season with salt and pepper to taste and top with fresh Parmesan to serve.
