For me, this is total comfort food. It’s so easy to make and every last bit gets gobbled up by the family. If I wasn’t on a continuous diet, I could eat this one every day.
Slow roasting your garlic is essential. It turns the garlic sweet. I use one whole bulb of garlic but don’t let that scare you off. Slow cooking the garlic also mellows it a bit so you get a nice garlicky flavour without it being overly strong.
You can use the pasta of your choice. I used naturally coloured fusilli which was perfect with the thick and creamy sauce.
