Mexican

I love Mexican food and the recipes found here are some of my favorites.

I grew up in California where Mexican food is everywhere and it was one of things I massively missed when I moved to the UK 25 years ago. Now tacos, enchiladas and burritos to name but a few  can be found a lot more widely in the UK and most people  now have a knowledge and general love of the food like me  when 25 years ago most people in the UK didn't. Luckily most of the ingredients in Mexican food can now be found easily in the UK.

Mexican recipes differ massively from country to country as the traditional Mexican food has morphed a lot into country variation of Mexican recipes.

I always start a Mexican meal by serving fresh chips and salsa and my recipes for these can be found here. I always recommend making your own chips as it makes such a difference to any meal.

I interchange corn and flour tortillas in my Mexican food recipes so if you can't get hold of corn tortillas always know it is fine to replace them with flour tortillas.
