This is the kind of burger that doesn’t hold back. We’re talking perfectly seared beef, creamy, salty blue cheese that melts right into the patty, and a few bold toppings that bring everything together without overcomplicating it.
In this post, I’ll walk you through my no-nonsense approach to making a killer blue cheese burger at home. It’s easy, fast, and absolutely packed with flavour. Let’s get into it.

Now, I know blue cheese is a love-it-or-hate-it kind of thing. But if you're in the “love it” camp like me, it’s a game-changer on a burger.

And don’t worry—it’s easy to tone it down or ramp it up depending on your taste. Whether you’re using creamy Gorgonzola, crumbly Stilton, or bold Roquefort, there’s a blue cheese out there for every burger lover.

Ingredients
There aren't a lot of ingredients in this blue cheese burger. Get them prepared and ready before you start and you can cook this burger up in minutes. You will need to start by preparing the caramelised onions which are also delicious on The French Burger!

- burger bun
- butter
- ground beef, preferably a 70/30% meat to fat ratio
- Stilton cheese or another blue cheese, more or less to taste
- caramelized onions
- mayonnaise
- French's mustard

- Step 1: Over a medium-low heat, add your butter to a pan and toast your bread buns. When they are golden brown and toasty, transfer them to a plate and set aside.

- Step 2: Turn the heat up to high and when your pan is smoking hot, place your burger patty in the pan and cook on one side for 5 minutes or until a nice crust forms on the underside.

- Step 3: After 5 minutes, flip your burger and cover and season with salt and pepper to taste. Top with your blue cheese of choice. In my case, it has to be Stilton. Let the burger cook over a high heat for two minutes.

- Step 4: Place a burger dome or pan lid over the burger. Reduce the heat to medium and let the cheese melt under the dome for 5 minutes.

- Step 5: In a bowl, mix the mustard and mayonnaise together and spread a generous amount on the bottom bun.

- Step 6: Once your cheese has melted and the burger has cooked under the dome, add your caramelized onions and the top bun.

- Step 7: Place your burger dome on top of your burger and allow the bun to steam for a while until soft and warm.

- Step 8: Add the top half of your burger to the bottom half. Dig in!
Tips for the Best Blue Cheese Burger
Use a soft bun – Purchase good quality buns or make your own. You might like to try making brioche buns or soft sesame seed buns.
Don’t skimp on the cheese – Blue cheese is the star. Be generous.
Keep the patty loose – Lightly formed patties cook more evenly and stay juicy.
What Blue Cheese Should You Use?
There’s no right or wrong here—just pick what you like. A few of my favorites:
- Stilton – British classic, creamy with a sharp bite
- Gorgonzola – Milder and softer, great melt
- Roquefort – Strong and tangy, for blue cheese lovers only
- Danish Blue – Bold and crumbly
Variations
Once you have this blue cheese burger down, you might like to add some more subtle but delicious flavors to it.
- Spicy - Add a few pickled jalapeños to it. Lush!
- Bacon - Try adding a couple sliced of crispy bacon or for a sweeter flavor, bacon and onion jam.
- Mellow flavour - If you want to go mellow, mix your blue cheese with a bit of cream cheese tame the tang.
Equipment
A good heavy pan or skillet: These work best for cooking burgers. I have tried in cheaper pans but you won't get as good of results.
A burger press and dome: If you are thinking about upping your burger game, purchase a burger press and dome if you don't already have one. You can use a spatula and a lid to your pan but the burger press and dome do a much better job.
A sharp metal spatula: Great for flipping the burger.
Storage
If you are making a few of these burgers, you can alway prepare everything a day or tow ahead of cooking. Store everything in separate airtight containers.
I don't recommend trying to reheat a burger like this.

5–6 minutes per side for well done
Use a meat thermometer for accuracy:
Medium-rare: 130–135°F (54–57°C)
Medium: 140–145°F (60–63°C)

The patty in this recipe can be slightly thicker than 1 inch, so use your eyes or better a meat thermometer to cook the meat to your preferred doneness.
