This retro primary school cake is a dessert my kids used to rave about when they came home from school.
I went to school in America and didn’t have this sprinkle cake over there but everyone here in the UK seems to know what it is.
My wife even had primary school cake in her school days, so I suppose its popularity is constant!
I have made this retro primary school cake recipe a few times with my daughter now and it is delicious, especially served with warm vanilla custard!

I strongly recommend making sure all the ingredients for this sprinkle cake recipe are room temperature to make sure your mixture doesn’t split and curdle.
You should also make sure the butter is softened to allow you to easily cream the butter and sugar together.
An easy way of doing this is by cubing the butter and leave it to soften for at least half an hour.

Primary School Cake
Ingredients
- 200g Unsalted Butter
- 175g caster sugar
- 1tsp valilla extract
- 3 medium eggs
- 200g self raising flour
For the decoration
- 225g icing sugar
- 3tbsp water
- Multicoloured sprinkles
Instructions
1. Grease your tray that measures {{ with baking paper. This sponge is ideally made with a rectangular tray but any shape baking tin will do.
2. Preheat your oven to 160 degrees C or 14O if using a fan oven. (325 degrees F or 275 F if using a fan oven)
3. Cream butter and sugar until light and fluffy then add the eggs one at a time while beating the mixture.
3. Add the vanilla extract, then gradually sift in the flour until all ingridients are combined.
4. Pour the mixture into the tray and bake for 25-30 mins, make sure you keep an eye on the cake. You can check it is done by sticking a fork into the centre of the cake and if it comes out clean, its cooked.
5. Leave cake to sit for ten minuets then place on a wire rack to cool.
6. To make the icing sugar, add all the icing sugar into a bowl then gradually add the water until you get the consistancy you want (make it thick enough so it won't slide off the cake).
7. Pour the icing all over the cake and sprinke ypour hundreds and thousands all over.
8. Finally Cut into squares, and you're done!
