
I make these tuna stuffed peppers at home when our Italian Summer vacation is just a distant dream.
In Italy, one of my family's favourite places to relax, tuna stuffed peppers can be found at almost every supermarket and deli.
We always purchase a quantity to enjoy with other antipasta and wine before dinner.
When I make them at home, we do the same thing. Open a bottle or two of Italian red wine and munch away before sitting down to the evening meal.
This recipe is easy!
Tuna stuffed peppadew peppers can be made in minutes. You can also make them a day ahead of time if you want.
I love the sweet and spicy flavour of the peppadew chillies. They are hot but not blindingly so.
My youngest daughter loves their sweet and spicy flavour so much she has started making this recipe herself.
This tuna stuffed peppers recipe makes enough for 15 people as a light snack but don't be surprised if you serve them to four people and they all go.

Italian Tuna Stuffed Peppadew Peppers
Ingredients
- 1 x 400g bottle of peppadew peppers
- 2 tins of tuna
- 3 tablespoons mayonnaise
- 2 tablespoons of the brine from the peppadew peppers
- 10 capers
- 2 spring onions - finely chopped
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Place all of the ingredients except for the peppadew peppers, salt and pepper in a food processor.
- Blend until the tuna is smooth but be careful not to over process.
- Check for seasoning and add salt and pepper to taste.
- Using a small spoon, fill each of the peppadew peppers with the tuna blend.
- If you have any leftover tuna, eat it. I don't like waste.
